When you think about American cheeses, Velveeta probably comes to mind. However, in its current form, Velveeta is inherently not considered a real cheese.
By FDA standards, it's a "pasteurized process cheese product." It contains whey, canola oil, milk protein concentrate, modified starch, salt, and other additives for preservation.
At Velveeta's very beginning in 1918, it actually was a genuine cheese made with cheddar, Colby, and Swiss scraps, plus an emulsifier. Little of that applies to today's version.
