Lemons are rich in vitamin C, which means they can be the sour but effective punch your immune system needs. However, squeezing lemon juice over hot food can negate this effect.
During the cooking process, the nutrient makeup of many foods can be altered, which is especially true for vitamin C, as it is a water-soluble and temperature-sensitive vitamin.
Vitamin C dissolves easily in water — especially when that water is hot — and it can be degraded by elevated temperatures as low as 85 degrees Fahrenheit.
