The white goo seeping from chicken while cooking is natural, though it may seem unappetizing. Heat releases this coagulated mix of fat, protein, and water.
The cause of this goo is also responsible for the foam on top of chicken stock. While it’s not the most appetizing to look at, it is perfectly safe to eat.
If the chicken is refrozen multiple times, the cells break and release their contents. This causes protein, fat, and water to float between the muscle fibers.
The coagulation solidifies and oozes out as a natural part of the cooking process. While there is no way to prevent or avoid it completely, choosing fresh chicken will help.
