Mofongo is a flavor-packed Puerto Rican dish of fried plantain mash with pork, and you can substitute the pork with shrimp to recall the dish’s Caribbean roots. Mash your fried plantains with some crispy bacon, add a tomato-based vegetable sauce and shrimp, and finish with a hint of rosemary and lemon.
Air Fryer Spicy Shrimp
This super easy recipe calls for cooked shrimp to be coated in flour, beaten egg, and Cajun-spiced panko breadcrumbs seasoned with garlic and chili powders, then tossed into an air fryer for perfect crispiness. Pair these mildly spicy shrimp with a cilantro and lime zest sour cream sauce.
