Cula Ekker, the Pie Queen of Wayne County, is the brain behind pickle pie, and with a little help, Ekker’s pie came to life at her brother Milton’s Sunglow Motel and Restaurant.
To make this pie, beat together eggs and sugar until thick. Whisk in cinnamon, nutmeg, lemon extract, cornstarch, cream, butter, and minced sweet pickles.
Pour the filling into a pie shell, bake at 350 degrees for about an hour, and then garnish with minced pickles and whipped cream to enjoy a custard pie like no other.
