Use Lentils For A Korean Barbecue-Inspired Vegetarian Meal

Our recipe for Korean BBQ-inspired lentils created by Tasting Table recipe developer Miriam Hahn is a meat-free meal filled with nutrients and flavor.
Lentils are packed with fiber and protein that will keep you full between meals. They can also soak up broths and other aromatics, making them an ideal vessel for flavors.
In our recipe, Hahn uses red lentils, but you can also use brown or green varieties. You'll just have to adjust the cooking time for the same result.
Create Korean BBQ lentils by mixing lentils with onion, garlic, Asian pear, soy sauce, ginger, and sesame oil. Enhance with fresh ginger, brown sugar, sesame seeds, or Gochugaru.
Hahn suggests serving it with chopped scallions and a side of rice. To take inspiration from Korean barbecue, pair it with sides like cucumber salad, kimchi, or pickled onions.
