Use A Muffin Tin To Make Snackable Shepherd's Pies
BY MICHELLE WELSCH
Muffin tins help you conveniently prepare individual, hand-held servings of your favorite shepherd's pie recipes and accommodate various dietary preferences in one pan.
Similar to making a regular shepherd's pie, coat your muffin tin with cooking spray, press mashed potatoes down into the bottom of each slot, and mold them around the sides.
Whether you use a recipe with lamb, vegetables, and fresh herbs or prepare a vegetarian or vegan version, scoop your meat or veggie filling into each potato divot.
The golden-brown baked mashed potatoes serve as a sturdy base for the rest of your chosen fillings and make the pies easy to remove from the muffin tin once fully cooked.
Cover the muffin tin with aluminum foil before popping the tray back into the oven for an additional bake. After about 10 minutes, your mini pies should be ready to cool and serve.
These cupcake-sized portions can be made in advance for a large number of guests and then stored in airtight containers in your refrigerator to be enjoyed for several days.
