Turn Your Canned Fish Into A Delectable Fish Burger
By STEPHANIE FRIEDMAN
Fish burgers are great to make if you invite pescatarians to your summer barbecue, but they can be expensive and challenging to make using fresh fish.
Canned fish is a cheaper, easier base for fish burgers. A 5-ounce can of tuna can cost as little as $1.99, and it's easier to flake into a fine texture for forming into patties.
Canned fish is also pre-cooked, so you don’t have to worry about cooking times and temperatures regarding the safety of your burgers. However, canned fish may turn out dry.
Pantry staples like mustard, mayo, breadcrumbs, eggs, and herbs can be added to the fish to create a succulent, flavorful patty. Not overcooking the burgers is also essential.
Eggs and breadcrumbs also act as binders to stop the patties from falling apart. Once you have the basic technique down, feel free to experiment with all kinds of canned fish.
