Transform Canned Tomatoes Into Creamy Soup With Oil And Garlic

There's a way to make tomato soup that is almost as easy as opening a can, and produces way tastier results. A can of tomatoes, olive oil, and garlic are all you need.
To create this simple soup, start by sautéing a few cloves of garlic in olive oil. While any plain canned tomatoes will work, we suggest whole peeled ones for the freshest flavor.
Canned tomatoes only need to cook for ten minutes at most. Once they've broken down in the pot, remove your soup from the heat and purée it with a standard or immersion blender.
As you blend, pour a 1/2 cup of olive oil in a steady stream for a smooth and rich texture without any dairy. Top off this delicious vegan soup with salt and pepper to finish.
