The Zesty Ingredient Exchange You Can Make For Vinegar
BY STEPHANIE FRIEDMAN
Vinegar is a crucial ingredient in many dishes, but if you begin cooking only to find your bottle is empty, you can use citrus juice like lemon, lime, or orange as a substitute.
In savory cooking recipes, vinegar's primary role is to add acidity and tang to balance richer, creamier elements of a dish and brighten the flavors of all the other ingredients.
Vinegar can be especially important in breaking down muscle proteins, thereby making meat more tender. An acidic citrus juice substitute will accomplish these same goals.
Replace vinegar with citrus juice at a 1:1 ratio. However, remember that different types of juice will have different flavor variations, like orange juice, which is very sweet.
