The Wet Ingredient You Don't Need To Include For Perfect Mexican Rice

Mexican rice wouldn’t be the same without the acidic, sweet taste that tomatoes add, but to avoid upsetting the liquid to rice ratio, try swapping tomato sauce for tomato bouillon.
Tomato bouillon is a dehydrated, concentrated stock with lots of seasoning. It perfectly complements the traditional garlic, cumin, and onion seasonings used to make Mexican rice.
The substitution ratio is one teaspoon of tomato bouillon for one cup of tomato sauce. Use the same amount of water as normal, which is two cups of water per one cup of rice.
