The Well-Known Indian Street Food That Makes Potato Patties The Star

Mumbai is famous for its vibrant street food scene, boasting all kinds of chaat — or savory snacks — that pair crunchy and creamy textures with sweet, tangy, and spicy flavors.
Ragda pattice is one of the most beloved of these snacks, being wildly popular in Mumbai and Gujarat. This vegetarian potato snack has a bold, complex flavor and textural variety.
Ragda pattice gets its name from its two main ingredients: white pea curry and fried potato patties. The dish is topped with tamarind, chili, mint coriander chutney, and spices.
To make this snack, potatoes are mashed with breadcrumbs and spices, formed into patties, and fried. The smashed white pea curry is poured over or underneath them.
The pancakes may be smothered with heaps of warm curry and toppings, or served on top of the curry with various chutneys, preserving their crispness.
