The Way To Cook Fresh Beets Without Staining Everything
BY STEPHANIE FRIEDMAN
To keep your hands free of pink marks when cutting beets, wear disposable or reusable gloves. You can also try rubbing olive oil all over your hands before picking up your beets.
To keep your wooden cutting board stain-free, brush it with olive oil or spray it with cooking spray. Just choose one with a neutral flavor that won’t impact your ingredients.
You can also layer wax paper or plastic wrap over your board. Or, stick with a plastic one, which will shed stains in the dishwasher after being rubbed with salt and lemon juice.
When cooking beets with the skin on, add an acid like lemon juice or vinegar to the pot to prevent bleeding. After, run them under the sink in a colander to avoid touching them.
As an alternative, try using a vegetable peeler over the sink with gloved hands. It may take a little extra effort, but it will be worth it to avoid getting pink stains all over.
