The Way Dominique Ansel Takes Bacon Sandwiches To The Next Level

The “bacon butty” is a popular British sandwich made with bacon and white bread, but when French pastry chef Dominique Ansel makes it, he uses a baguette.
The baguette’s crispy crust and chewy interior adds texture and a hearty structure to the sandwich, and its tangy flavor makes a bright counterpart to the bacon.
Ansel also swaps the ketchup or brown sauce in the traditional butty for a blend of sherry and butter, which adds sweet and nutty flavors along with a hint of fruit.
He also uses back bacon, which comes from the center of the pork loin. For your own version, you can easily use American bacon for results that are just as delicious.
