The Vital Ingredient Your Chicken Parmesan May Be Missing

Chicken parmesan is a classic Italian dish that is cheesy, saucy, and filling, often found on restaurant menus, families' dinner tables, and in the grocery stores’ frozen food aisle. While many prefer homemade, home-cooked chicken parmesan can sometimes fail to deliver, especially without the proper ingredients.
Cafe Delights recommends using chicken breast pieces of the same size, and a blend of fresh mozzarella and parmesan is great for the cheese, per The Recipe Critic. For the tomato sauce, homemade is much better than store-bought, but when it comes to the breading, the one important ingredient you should add is potato starch.
According to Serious Eats, potato starch helps the breading stay crispy during the cooking process, but you shouldn’t overuse it, as too much of it can make the finished product dry and crumbly. Per Medical News Today, potato starch also does the additional job of ensuring a nice golden color when fried.
