For the tomato sauce, homemade is much better than store-bought, but when it comes to the breading, the one important ingredient you should add is potato starch.
According to Serious Eats, potato starch helps the breading stay crispy during the cooking process, but you shouldn’t overuse it, as too much of it can make the finished product dry and crumbly. Per Medical News Today, potato starch also does the additional job of ensuring a nice golden color when fried.
