Roasted bananas are the secret ingredient for casserole that's extra creamy. They complement both the brown sugar and sweet potato, making the depth of flavor more profound.
The bananas lighten the dense sweet potatoes, but also hold the casserole together for a dish that's lighter yet rich. They also make a great vegan substitute for eggs.
To concentrate their natural sugars and add a caramelized flavor, whole, unpeeled bananas at 350°F for 10 to 15 minutes. The short time is key for a soft texture.
Cool the bananas, peel them, and mash them together with your cooked sweet potatoes and other ingredients. When baked, the fruit will aid with the fluffy rise of the casserole.
