The Unexpected Ingredient Alton Brown Showers On Watermelon

Pork rinds are a delicious convenience store snack to most of us, but to Alton Brown, they’re also the perfect topping for fresh, juicy watermelon on a hot summer day.
The chef says, "If you're not dusting your watermelon with ground pork rinds, you are […] doing it wrong." Pork rinds can actually be ground into a panko-like crumb topping.
The rinds add a savory, crunchy element to contrast with watermelon and make it taste even sweeter. Simply grind up the rinds in a blender and coat sliced watermelon with them.
On the savory side, pork rind "breadcrumbs" can be used to bind dishes like meatballs and meatloaf in place of regular breadcrumbs. You can even use rinds in different flavors.
