The Ultimate Way To Give Green Beans A Delicious Char
BY TOM MAXWELL
There are various ways to char green beans for a deliciously smoky flavor. The easiest and most delicious way is to use a hot skillet that's been used to sauté shallots and garlic.
Shallots and garlic have a lot of natural sugars that release as they're cooked in hot oil. These flavors stay in the pan and deeply flavor green beans as they char over high heat.
You can further flavor the oil in various ways. Try adding anchovies, substituting ginger for shallots, or stirring the shallots and garlic back into the charred beans.
You can use any kind of oil you'd like, but olive oil and butter are great options here. Sauté the shallots and garlic just until they start to brown to avoid burning them.
