The Trick For Making Creamy Soups Without Including Any Dairy

Many creamy soup recipes call for dairy, but you can use a starchy ingredient in its place. Starch molecules absorb water when exposed to heat, thickening the soup.
Simply add an ingredient like rice, pasta, or potatoes to your soup, then simmer it for an extended amount of time. They'll release starch and help to thicken the liquid.
You can also use options like leftover bread, barley, oatmeal, and noodles. With starches like bread or rice, it may help to blend the soup to make it creamy.
Beans will also work, and once they’re cooked, you can take them out, mash them, and add them back in to further thicken the soup. This works with potatoes, too.
Alternatively, you can make a vegan roux with flour and vegetable oil in place of butter. Combine and cook them together, add it to your soup, and simmer until it thickens.
