The Top Pan For Toasty Pineapple Upside-Down Cakes

If you want to impress guests (and yourself) with your next pineapple upside-down cake, reach for a trusty cast iron skillet, which creates both the best cake and topping.
This dessert can wind up with a burnt topping or burnt cake, but cast iron's super hot surface caramelizes the topping beautifully while the cake remains tender and golden.
First, generously coat the pan with oil and heat it up, then cool it and wipe the oil off. This makes it more nonstick, though you should still butter and flour the pan's interior.
Prepare your pineapple upside-down cake recipe and pour the fruity syrup topping and batter into the pan. Keep an eye on it as it bakes, since the cast iron can speed things up.
When the cake is done, don’t leave it sitting in the pan, or else it can get much stickier and more difficult to unmold. The final results are definitely worth this extra effort.
