The Tasty Indian Potato Dish That Can Be Tossed Right In An Instant Pot

When cooking Indian cuisine, there's no better way to treat potatoes than simmering them in an aromatic curry sauce to make the classic Punjabi dish dum aloo.
This dish consists of steamed potatoes bathed in a spice-packed sauce. "Dum" refers to cooking over low heat in a sealed pot or via steam, while "aloo" means potato in Hindi.
There are many regional variants on this dish, but all versions are perfect for your pressure cooker or Instant Pot. To start, briefly sauté the curry base directly in the Instant Pot.
The base consists of tomato paste, onions, garlic, turmeric, coriander, garam masala, cumin, chili powder, cardamom, and ginger. You can also add sweet, earthy fenugreek or fennel.
Next, add whole peeled potatoes if they're on the smaller side, or large potatoes cut into wedges. Pour in a 1/2 cup of water and tightly seal the Instant Pot.
Pressure-cook everything for about eight minutes, followed by a quick release. Garnish the final dish with some chopped cilantro or a drizzle of yogurt for a tangy creaminess.
