Sour cream can enhance both the taste and texture of your pasta sauce in a similar manner to heavy cream, only it imparts a lovely tart flavor that is irresistible to the palate.
Sour cream is a dairy product that has been fermented with lactic acid. This quality will help balance out a sweeter tomato sauce while adding a subtle sharp and creamy element.
You’ll only need a quarter cup of sour cream for every two cups of sauce to enhance the flavor and create a thick and creamy texture.
Additionally, you do not want to bring your sauce to a boil once you've added the sour cream or you risk it curdling, separating, and basically ruining your dish altogether.
