Key West Chicken relies on a combination of sweet and tart flavors on top of savory grilled chicken. The marinade uses a few unexpected ingredients to create this delicious taste.
To make this dish, chicken breasts or tenderloins are marinated in soy sauce, the zest and juice of both oranges and limes, canola oil, chopped garlic, salt, pepper, and honey.
The chicken is then grilled and served with more fresh citrus juice. It’s the perfect balance of sweet honey, tart citrus, and unexpected savoriness from the soy sauce.
The marinade should be a ratio of three parts fat, one part acid, and one part seasoning. Keep in mind that citrus juices tenderize meat, but make it mushy if it sits for too long.
Only marinate the chicken for an hour. To kick up the flavor, reserve some marinade before applying it to the chicken, reduce it by simmering in a saucepan, and use it as a sauce.
