The St. Lucia Day Treats Marcus Samuelsson Remembers Fondly

Despite his Ethiopian heritage, renowned chef Marcus Samuelsson’s holiday memories are largely shaped by his childhood in Sweden. Most notably, he recalls the tastes and smells of food on St. Lucia Day, and while he has many favorite holiday treats, including gingersnaps and saffron buns, there’s one that stands above the rest.
The St. Lucia staple that Samuelsson loves so much is glögg, a warm beverage made of red wine, citrus, cinnamon, clove, and ginger. It’s a drink that pairs beautifully with gingersnap cookies, which are also packed full of warm holiday spices, and Samuelsson’s new restaurant Hav & Mar has paid tribute to these traditions.
During this past winter, Hav & Mar served gingersnaps and their own glögg drink, named Gimme Gimme Gimme Glögg, made with mulled red wine, yuzu sake, Zanzibari nutmeg, rooibos, and orange oil. Other St. Lucia Day treats from Samuelsson’s childhood include herring, gravlax, turkey, roasted pork, and meatballs.
