Potato stacks are towers of thinly sliced potatoes baked to perfection and seasoned with a mix of spices. If you want some sweetness in this dish, make it with sweet potatoes.
Sweet potatoes will boost the flavor of your potato stacks with a honey-like taste to go with the savory seasoning. You can swap white potatoes for sweet ones in a 1:1 ratio.
The extra sugar helps to caramelize the potato stacks' edges, and sweet potatoes have a softer texture when cooked, making this dish crispy and melt-in-your-mouth delicious.
Choose sweet potatoes that are firm with smooth skin and an even shape. This way, all of the slices in your stack will be a similar size and cook at the same pace.
Jewel, Covington, or Garnet sweet potatoes provide the most sweetness. Finish off your stacks with Parmesan, a sprinkle of cayenne pepper, or a drizzle of hot honey on top.
