The Specific Type Of Mozzarella Jet Tila Always Keeps In The Refrigerator

Everyone has a favorite when it comes to cheese, and chef Jet Tila always keeps one particular cheese on hand that is an unassuming, but solid choice: mozzarella.
Tila keeps a low-moisture mozzarella log on hand, saying "It's the master of melt and key for pizza” and works great as a “supporting character” for cheddar in other dishes.
Pre-shredded low-moisture mozzarella also keeps and even freezes well, but Tila says the downside is that "pre-shredded will never give you the foot-long melted cheese pull."
Mozzarella logs can also technically be frozen like shredded mozz, but this can significantly change the texture when thawed, so we recommend shredding it yourself before freezing.
