The Simple Way To Turn Yogurt Into Cream Cheese
BY STEPHANIE FRIEDMAN
To turn yogurt into cream cheese, you’ll need Greek yogurt, salt, cheesecloth, a piece of string, and a rubber band. The process is easy, but it will take about a day to complete.
Start by mixing about ¼ teaspoon of salt per one cup of yogurt. Scoop the mixture into a cheesecloth and secure the edges together at the top with a rubber band.
Place it so that the liquid can strain out of the cloth overnight, such as hanging it up over a bowl in the fridge. In the morning, you should have cream cheese.
While you can use any type of plain yogurt to make cream cheese this way, Greek yogurt will produce the thickest spread possible since it is already strained.
The result is a cream cheese called labneh, or "yogurt cheese," which can be spread on bagels, used as a dip, a meat accompaniment, or even a mix-in for cheesecake and lasagna.
