The trick to having bananas for fresh banana bread whenever you want is to freeze ripe bananas. You can freeze them with the peel on or off and whole or cut up.
When you're ready to make banana bread, thaw them at room temperature or in the fridge overnight. You can also use the microwave to thaw the bananas.
After thawing, your bananas will be ready to be added to the bread batter. They will keep in the freezer for about three to six months.
