One of the best ways to upgrade and brighten up your banana bread is to add a little citrus. Orange blends well with banana, and a little added orange juice or orange zest will not only create a refreshing, fruity flavor, but the juice can also make your banana bread super moist.
As for the bananas themselves, if your bunch isn't ripening fast enough, the Pioneer Woman suggests placing them in a paper bag with other ripe fruit, and they’ll be ready for banana bread in as little as 24 hours. To bake your bananas for even faster results, just roast unpeeled bananas for 15 to 20 minutes at 300 degrees Fahrenheit.
