The Simple Trick To Keep Bacon From Sticking To A Wire Rack

When you're whipping up crispy oven-baked bacon and it decides to cling to the wire rack, simply rescue it with ease by lifting each slice with a pair of tongs as they cook.
This simple step will shift your meat and allow some of the grease to cover the surface of the rungs of your rack so all that lovely rendered fat doesn't stick.
However, using a wire rack and rimmed sheet pan are key for this technique. The rack provides good air circulation, while the pan will collect all the grease.
When you employ this trick depends on the bacon's thickness and if you want it chewy or crunchy. Either way, plan on performing your tongs trickery at the cooking time midpoint.
