Deveining shrimp is a troublesome task that can slow down prep, but you can actually do this much faster using kitchen shears. First, hold the shrimp under a stream of cold water.
Make a shallow cut along the back using your kitchen shears, which will expose the vein. From there, the water pressure will help lift and rinse the entire intestinal tract away.
