Zucchini noodles are a healthy, keto-friendly alternative to traditional pasta noodles. Zucchinis are the perfect shape for cutting into long and thin layers that resemble lasagna noodles; you can use a sharp knife, a large vegetable peeler, or a mandoline to cut thin, even slices.
One issue with vegetable noodles is that they can taste bitter, so try laying your cut zucchinis on a sheet tray, sprinkle them with salt, let it sit for an hour, and then rinse the salt off and dry thoroughly. All that's left to do is follow your favorite recipe and dig into some low-carb lasagna.
