Tasting Table recipe developer Jessica Morone's best gingersnap recipe includes molasses, ginger, cinnamon, cloves, and an unexpected secret ingredient.
If you love to bake, you're already familiar with vanilla extract, and you may also know almond extract, lemon or peppermint extract, and more. These super-concentrated ingredients allow you to add flavor to baked goods without changing their structure, and for the best molasses gingersnaps, skip the vanilla and reach for maple extract.
Morone says that maple extract "gives these cookies a subtle maple flavor and adds to the warm spices in the cookies that make it seem so perfect for the fall and winter seasons."
