The Savory Haitian Dish Top Chef Star Gregory Gourdet Always Brings To A Potluck

Chef Gregory Gourdet’s Haitian heritage provides him with a repertoire of recipes. For potlucks, he usually brings a savory dish called poule nan sos.
The recipe for poule nan sos, or "chicken in sauce" — specifically a Creole sauce — can be found in Gourdet's cookbook "Everyone's Table."
It is a dish that involves the marination of dark meat chicken in a mixture of thyme leaves, garlic cloves, sliced onions, sweet and spicy chiles, and three citrus juices.
The infused chicken then joins a tomato-based stew with yellow and red bell pepper slices. It can be enjoyed on its own, or with mashed potatoes or rice.
