The Rich Ingredient Gordon Ramsay Uses To Amp Up Tartar Sauce
BY ANDI PREWITT
Fish and chips paired with a creamy tartar sauce is a meal synonymous with chef Gordon Ramsay, who likes to elevate this sauce further with one extra ingredient: crème fraîche.
The Ramsay version of tartar sauce is quite simple. It calls for some diced pickles, mayo, minced shallot, lemon juice, and approximately three tablespoons of crème fraîche.
Crème fraîche is naturally fermented with buttermilk, whose bacteria impart a slightly tangy flavor. It also results in a thicker condiment, as it has a fat content of around 30%.
