The Reason You Should Try Adding Water To Scrambled Eggs

Achieving the best scrambled eggs doesn't require fancy ingredients or techniques. One very simple tip is to add a splash of water to the eggs, which doesn't dilute the flavor as you may think, but actually improves the texture of the final product.
The added water steams the eggs as they cook in the pan, resulting in a much fluffier scramble. Food scientist Natalia Alibrandi further elaborated that the water also slows the process of the proteins binding together, preventing tough and rubbery eggs.
It's best to start with a half teaspoon of water for each egg; the more water is added, the lighter and softer the curds will be, but try not to add more than two teaspoons of water. Also, cook the eggs over medium heat so water won't evaporate all at once.
