There are a few tricks that can help you brew the perfect cup of espresso. One tip has been gaining traction among baristas and coffee lovers: adding sugar to the portafilter.
The addition of sugar to the portafilter won’t result in a sweet drink, but will transform the coffee’s overall flavor and texture while imparting a subtle sweetness.
Add sugar to the top of your coffee grounds in the portafilter, and press the coffee and sugar together to create a flat surface before brewing your espresso.
The heat of the water will soften the sugar and seamlessly meld it with the coffee, reducing bitterness and adding a slightly sweetness that still lets the beans be the star.
