The Reason You Should Always Bake Chicken At A High Temperature
BY STEPHANIE FRIEDMAN
It's very easy to under- or overcook chicken, especially in the oven, where it can be hard to gauge doneness. To avoid this, try baking at a higher temperature for a shorter time.
Bake your white meat chicken, such as chicken breasts, at a temp between 375 to 450 degrees Fahrenheit, which is hot enough to cook it through before it dries out.
Pound chicken breasts to an even thickness before baking them. When chicken reaches an internal temperature of 165 degrees Fahrenheit on a meat thermometer, it's done.
The time it takes to bake the chicken depends on its size. Generally, individual chicken breasts baked in a 450 degree-oven should be done after 20 minutes.
Let the meat rest for 10 minutes after cooking to keep it moist. Don't try this method with chicken thighs, as the skin can burn and they require a longer cooking time in general.
