The Real Reason You Shouldn't Keep Olive Oil Next To The Stove

From being a tried-and-true way to pan grill meat to acting as a classic salad dressing flavor, olive oil ranks alongside salt and flour as a must-have cooking staple. For convenience, it is common to keep olive oil close to the stovetop, however, this is incorrect.
Olive oil should stay far away from heated places filled with light as these two factors will cause olive oil's taste to turn bad. More specifically, its flavor can begin to resemble vinegar when stored near the stovetop.
According to May Mori, vice president of technical services at California Olive Ranch, keeping the bottle in a cool, dark place is best. One of the ideal places to store a bottle of olive oil is in a mild-temperature cupboard.
