The Puerto Rican Cornmeal Fritters You Should Definitely Try

Many cultures have their own take on a bread-like corn dish, from hot water cornbread in the American South to New England’s johnnycakes. In Puerto Rico, you’ll find cornmeal fritters called sorullos de maiz that are so versatile, they can be served as a side, a snack, or a sweet breakfast treat alongside coffee.
Sorullos de maiz have a two-step cooking process in which the batter is precooked on the stovetop, then rolled into a tube and deep-fried. The batter is made with cornmeal, sugar, water, and salt, which is boiled together until a dough forms, and then grated gouda or Edam cheese is mixed in before the mixture is cooked.
Once finished, sorullos de maiz are typically served with a side of dipping sauce called mayoketchup, which is essentially a blend of mayonnaise and ketchup. If you want to make a sweet version of these fritters, you can add ingredients like sugar, guava jam, coconut milk, or vanilla into the batter for a great breakfast treat.
