Baking the perfect biscuit that comes out of the oven with a beautifully golden brown crust is something of an art form. To achieve this, apply a wash before baking.
The process involves lightly coating the top of unbaked biscuits with a pastry brush using a liquid ingredient such as cream, butter, or milk to help create a browning effect.
Dairy products are effective in promoting a golden brown crust because they contain milk solids, which include sugars that caramelize when exposed to high temperatures.
Apart from dairy products, some bakers prefer using different variations of egg wash to lend a golden tint as well as a shiny finish.
