The Prep Step To Take For Extra Fluffy Mashed Potatoes
By AMANDA BRETZ
There are several tips and tricks you can use to make sure your mashed potatoes turn out smooth, creamy, and fluffy. While some cooks swear that creamy potatoes only get that way by adding things like sour cream, there is another way to get ultra-fluffy and flavorful mashed potatoes that you may not have tried yet.
If you want the ultimate fluffy, creamy mash, you should try making a batch of chantilly potatoes. While you may have used dairy products in your mashed potatoes before, chantilly potatoes involve putting boiled potatoes into a ricer and folding in some rich whipped cream — or as it’s known in French cuisine, chantilly cream.
To make this scrumptious dish, run your cooked potatoes through a ricer until smooth, whip chilled, unsweetened heavy cream until soft peaks form, then fold the potatoes into the cream. To be very traditional, you would also place the potato and cream mixture into a buttered casserole dish, top it with cheese, and bake it in the oven.
