The Peculiar Preparation Of One Of Beethoven's Favorite Meals
BY MICHELLE WELSCH
When it came to soup, Ludwig van Beethoven had clear instructions as to how it should be prepared and presented: a specific combination of raw eggs and bread soup.
Beethoven's bread soup has been described as something closer to mush. He is also known to have requested nearly one dozen large raw eggs to accompany the meal.
Before consuming the raw eggs, Beethoven would inspect each one. With bare hands, he’d hold them to the light, and remove the top to observe the gelatinous mass and smell.
Should an egg not have passed Beethoven's scrutiny, he would reprimand his house staff. Unsurprisingly, many housekeepers quit or were fired.
