The Pasta Swap You Should Make For An Elevated Alfredo Dish
BY JOHN TOLLEY
While fettuccine is an Alfredo staple, it can feel mundane because it's simply another flour noodle. For a delicious and textured alternative, swap fettuccine with gnocchi.
Gnocchi are small potato dumplings that bring a pillowy soft, yet toothsome texture to the dish. The potato offers an almost nutty vegetal flavor and fluffiness.
Moreover, the textured exterior often found on gnocchi gives it extra surface area for the Alfredo sauce to cling to while offering more versatility during the cooking process.
Either add the gnocchi directly to the simmering Alfredo sauce after they've been boiled or, if you're craving a bit of crunch, pan-fry the gnocchi before adding them.
Gnocchi can also be a great foil for other ingredients that one typically adds to Alfredo sauce. Chicken, garlic, broccoli, and spinach all pair wonderfully with them.
