Add vinegar to your next homemade chocolate cake. While it may sound like a strange addition, it elevates the moisture in cake without adding a distracting tangy flavor.
The acidity of vinegar helps to activate the baking soda in your cake recipe, creating bubbles in the batter for fluffiness and stabilizing the proteins in the flour for moisture.
A good guideline is 2 tablespoons of distilled white vinegar for every batch of cake batter. You may have to adjust depending on the amount of eggs and baking soda in your recipe.
