The Palestinian-American Kansas City Café With Stellar Hummus
By KATIE HORST
Based in Kansas City, Missouri, Palestinian-American café Baba’s Pantry has earned itself a spot on Bon Appétit's list of Best New Restaurants of 2022, and reporters call the café's hummus with shaved beef or lamb "perhaps the best we've ever had." However, the velvety hummus isn’t the only dish you’ll love at Baba’s Pantry.
Baba's Pantry owner Yahia Kamal has been serving up traditional dishes like falafel, kebabs, and shawarma since 2021, along with sides like tabouli and "Baba's" ghanoush. You can also enjoy Turkish coffee, sticky and sweet baklava, and a shawarma made with jackfruit to complement Kansas City's growing vegan culture.
What makes Baba's Pantry particularly special is that Kamal's entire family is involved in running the restaurant. Yahia Kamal himself explains that "We want to present everything in the Palestinian way [...] we're welcoming; we're involved with the customers; and we're serving them the best ingredients we can find."
