A chopped cheese sandwich has ground beef and spices served on a hero or hard roll. There's only one type of cheese you should be adding to it: American cheese.
The cheese is meant to melt through the chopped bits of meat and become something closer to a cheese sauce — and no cheese melts quite like American.
The emulsification process of American cheese gives it a strong structure, preventing it from breaking when it melts or becoming rubbery as it cools.
