The Only 3 Ingredients In Thomas Jefferson's Favorite Muffins
BY NIKKI MUNOZ
Thomas Jefferson loved to snack on Monticello Muffins. The original recipe, found in the cookbook of Jefferson's granddaughter, requires only three ingredients.
All you need is 4 cups of flour, 1 ½ packets of yeast, and 1 ½ cups of water. Ideally, they are cooked on a cast iron griddle, but a regular cast iron pan or griddle works fine.
Start by mixing the flour, yeast, and water. Next, knead the dough with your hands and add small amounts of extra flour until the dough is no longer sticky.
The dough needs to rise overnight before being shaped into small balls and rising for one more hour. To cook, heat the griddle and cook the muffins for five minutes on each side.
