The Only 2 Ingredients You Need For Sweet Potato Pancakes

A warm stack of pancakes is a Sunday morning classic, but if you want to shake up your flapjack routine or get a little extra nutrition, try two-ingredient sweet potato pancakes.
While classic pancakes require ingredients like flour, milk, baking powder, and eggs, sweet potato pancakes only need cooked sweet potatoes and eggs.
Prior to making the pancakes, precook your sweet potatoes until they’re soft. Next, peel and mash the potatoes, and mix the mash with one egg for every potato you use.
Dollop the mash into a skillet like you would with regular pancake batter and cook the pancakes for about three minutes per side. You can serve them with sweet or savory toppings.
