The One Veggie Thomas Jefferson Was Weirdly Fixated With

Thomas Jefferson was a foodie through and through. He was a fan of wine, beer, and French cuisine, and was particularly fixated with peas.
Jefferson grew fifteen types of the English pea in his garden and had a community of neighbors that shared in the joy and passion of this spring vegetable.
According to Jefferson’s estate, if he wasn’t eating peas plain, he had them in a split pea soup. He used fresh rather than dried split peas, which made the dish especially unique.
